Chocolate Chip Protein Cooke - Flourless, GF
Ingredients
- 1/2 Cup Nut Butter of your choice I like Kirkland/Costco's Almond Butter best for these. Seed butter- like Sunflower or Tahini- can be used for nut sensitive folks
- 1/4 Cup Coconut Sugar Or Swerve brown sugar for 0 net carbs
- 1/4 tsp Sea Salt If you use salty peanut butter, use a little less salt! 😜
- 1 Large Egg
- 1 Large Egg White
- 1/4 tsp Vanilla Extract
- 1/4 tsp Baking Soda
- 2 Scoops Plexus Vanilla Lean (39 grams) You can use either Whey or Vegan Lean
- 2 Tbsp Coconut Flour
- 1/4 Cup Stevia-sweetened Chocolate Chips
Instructions
- Preheat your oven to 350 degrees F.
- Line 2 baking sheets with parchment or Silpats.
- Mix together your nut butter, coconut sugar, salt, egg & egg white and vanilla extract. Whisk briskly or squish with a spoon until it is well blended.
- Sprinkle the baking soda, coconut flour and Plexus Lean protein powder over the top. Work this in with a rubber spatula- it may seem dry at first but it will come together as you stir and squish.
- Fold in chocolate chips.
- Scoop out the dough in tablespoons on your baking sheets, then flatten the tops slightly (they will not spread out like normal cookies).
- Bake 5-6 minutes (yes, I really do mean 5), until barely golden- they will still seem doughy in the middle but they are yummy, I promise.
- Let rest on the cookie sheet for a couple minutes before moving onto a baking rack to cool.
